Pumpkin Cookies
1 cup shortening
2 cups sugar
2 cups canned pumpkin
3 cups + 2 TBSP flour
2 tsp baking powder
1/2 tsp salt
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp ground ginger
1/8 tsp vanilla
Preheat oven to 375.
Cream shortening and sugar. Add pumpkin. Sift all other dry ingredients and add to creamed mixture. Add vanilla. Drop on parchment paper lined (or greased) cookie sheet and bake for 15 minutes. Allow cookies to cool slightly (or completely) before icing.
Icing:
1/4 cup orange juice
1 TBSP butter, melted
2 cups powdered sugar
Mix ingredients together until smooth then spoon over cookies.
Yields 3 dozen cookies.
