Sunday Supper - Spicey Beef Stew

Did I ever mention that I got a new Instant Pot for Christmas to replace the one that got cooked in the oven?  Yeah, I know.  If you are new here and didn't hear that original story.... my first Instant Pot suffered a horrible, horrible death and I'm still, three years later, a little angry about it.  But I finally have a replacement and I'm over the moon happy about it.

So...  That was a long way of saying today's Sunday Supper recipe is geared towards using the Instant Pot.

Spicey Beef Stew from Taste of Home, cooked in the Instant Pot. It's fast, it's easy, it uses simple ingredients and best of all, it falls well within my diabetic low-carb guidelines.  Yum!

Sunday Supper - Smoky Tortillia Soup

 Today's Sunday Supper recipe is for Smoky Tortillia Soup.


The recipe (and photo) comes from a blog post from Vegetarian Ventures.  You'll have to scroll waaaaaay down through the post to find the actual recipe but the photos you'll pass by are gorgeous and the recipe looks like it's probably worth the effort.

I have a tried and true, super simple, dump a bunch of canned stuff in the crockpot and wait for dinner time recipe for tortillia soup but it is nothing like this recipe.  This recipe looks and sounds delicious!  Much, much more delicious than my old version of tortillia soup. It also sounds super easy to make believe it or not.   And, this recipe is vegetarian and can easily be vegan by omitting the sour cream.  Yum!

Sunday Supper - Spinach and White Bean Soup

Okay, today's Super Bowl Sunday Supper may not be traditionally Super Bowl-ish but (1) today's weather is gross, (2) Sarah and I take turns cooking and it's my turn tonight, (3) I saw canned white beans in the grocery store and for absolutely no reason, I felt the need to buy some and (4) when I Googled February soups, Spinach and White Bean soup popped up.  I felt it was a sign.


So yeah, we're going non traditional this year.  And besides, this year's Super Bowl, with cardboard people filling the stands, will be fairly non traditional too.  It's a theme.

Sunday Supper - Creamy Mushroom, Chicken and Wild Rice Soup


This recipe for creamy mushroom, chicken and wild rice soup from Closet Cooking was a surprise.  See, I don't like mushrooms.  you will never convince me they don't taste like swamp mud and don't even get me started on their texture.  Ick!  But, a few weeks ago Sarah wanted to fix dinner and she wanted to fix this recipe so I was happy (well, I put on a somewhat fake smile at least) and told her to go for it.

The first two bites were normal swamp mud mushroom flavored but the mushrooms were in big slices so they were easy to eat around. The third mouthful wasn't too bad and by the fifth mouthful, I was scarfing it down like I actually enjoy mushrooms.  I may have even gotten seconds.

Now, I'm hoping I can talk Sarah into cooking dinner again.

Sunday Supper - Lentil Soup

We're welcoming December's cold with some warm, hearty soup.

We're going to give this lentil soup recipe a try.  I hope I can talk my family into trying it.  Lentils are supposed to be so good for you and the only way I've ever cooked them is in an Indian dish that was way too 'curry-ish'  for the rest of the family.  This recipe seems much more bland for those who don't like steam to come out of their ears while they eat.

And,  I love the creator of this recipe, French Women Don't Get Fat.  I'm taking their word that I can eat this soup and magically become skinny.   :)
